A short while ago we talked about the virtues of lemon balm, and this time we are putting it back in the spotlight in the kitchen. Another way to take advantage of this plant with its delicate lemongrass flavors. We offer lemon balm bites with white fish, but you can also opt for a vegan version for example.

Ingredients for bites
7oz of white fish
About 7 lemon balm leaves
3 cloves of garlic
¼ tsp gomasio (japanese seasoning, an alternative to salt)
Sichuan pepper
Lemon zest
Swim ingredients
½ Chinese cabbage
2 carrots
4,5 oz Shiitake
9 oz konjac noodles
2 sticks of lemon grass
1 tbsp of red miso
1 tbsp soy sauce
Gomasio
Lemon zest
Roughly 20 lemongrass leaves
How to
- First boil 50fl oz of water with the miso, soy and lemongrass in large pieces (to be removed for tasting)
- Slice ½ Chinese cabbage and grate the 2 carrots
- Add them in the broth already boiling
- Slice the Shiitakes and plunge them into the pot.
For a total cooking time of 15 minutes .
Meanwhile, we take care of preparing the bites of lemon balm - Cut the white fish into large pieces in order to mix it with the lemon balm, peeled garlic, Sichuan pepper (or ordinary pepper) and a little bit of lemon zest until you obtain a homogeneous and smooth paste.
- Shape into balls, you can make between 8 and 12 balls depending on the size you want.
- Place them on a leaf of lemon balm and put the steam basket on the broth for 7 min.
- 2 minutes before the end of the steaming add the konjac noodles to the broth.
- When the cooking is finished you can serve in bowls and arrange the lemon balm bites. Take off the lemon grass.
A small tip..
Finish by seasoning your dish with a little lemon zest and gomasio to taste and of course some extra lemon balm leaves.
