Here is a recipe 100% veggie, greedy and easy to make. The coral lentil dahl is quite common in the Middle East and Asia. It is rich in protein and fiber, in short it is completely healthy! Let yourself be carried away by its flavors from elsewhere!

- 7oz of coral lentils
- 0,35oz fresh ginger
- 1/3 cup coconut oil or other vegetable oil
- One can of tomato paste
- 17fl oz water
- 1 onion
- 2 peppers
- 3 cloves of garlic
- 2 tsp of curry powder
- Fresh coriander
- 1 firm tofu
How to
- Mince your onion and chilies, then chop the garlic and ginger.
- In a frying pan, fry the onion, chillies, garlic and ginger in oil and then brown your tofu with the mixture and the curry.
- Once well colored, remove the tofu from the pan.
- In the same pan over medium heat, pour the coral lentils with the tomato paste and add the water. Cover and check from time to time if additional water is needed for 20-25min.
- When cooked, your lentils should be tender. Add the tofu and fresh coriander just before serving. You can add lemon juice for more flavor.
- As an accompaniment, let yourself be tempted by naans.
- To save time, you can pan-fry the tofu separately while the lentils are cooking.
